Twice-Baked Cajun Shrimp Stuffed Potatoes

Directions

  1. Preheat oven to 200°C (400°F). Scrub potatoes, pierce with a fork, and bake directly on oven rack for 45–50 minutes, until tender.
  2. While potatoes bake, toss shrimp with olive oil and Cajun seasoning. Sauté in a skillet over medium heat for 3–4 minutes until just cooked. Set aside.
  3. Remove baked potatoes from the oven and let cool slightly. Cut each potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin layer to support the skin.
  4. Mash the potato flesh with butter, sour cream, half the shredded cheese, salt, and pepper until smooth and creamy.
  5. Stir in cooked shrimp and sliced green onions, reserving a few for garnish.
  6. Spoon the mixture back into the potato skins, mounding slightly. Sprinkle remaining cheese and optional paprika on top.
  7. Return stuffed potatoes to the oven and bake an additional 15–20 minutes, until tops are golden and bubbly.
  8. Remove from oven and garnish with remaining green onions before serving.
