Directions
- Preheat oven to 200°C (400°F). Scrub potatoes, pierce with a fork, and bake directly on oven rack for 45–50 minutes, until tender.
- While potatoes bake, toss shrimp with olive oil and Cajun seasoning. Sauté in a skillet over medium heat for 3–4 minutes until just cooked. Set aside.
- Remove baked potatoes from the oven and let cool slightly. Cut each potato in half lengthwise and scoop out the flesh into a bowl, leaving a thin layer to support the skin.
- Mash the potato flesh with butter, sour cream, half the shredded cheese, salt, and pepper until smooth and creamy.
- Stir in cooked shrimp and sliced green onions, reserving a few for garnish.
- Spoon the mixture back into the potato skins, mounding slightly. Sprinkle remaining cheese and optional paprika on top.
- Return stuffed potatoes to the oven and bake an additional 15–20 minutes, until tops are golden and bubbly.
- Remove from oven and garnish with remaining green onions before serving.
