- Prepare the Lemon Syrup:
In a small saucepan, combine the water, sugar, lemon zest, and lemon juice.
Heat gently over medium heat, stirring until the sugar completely dissolves.
Remove from heat and let the syrup cool completely before using. Set aside. - Make the Lemon Curd:
In a bowl, whisk the lemon juice and cornstarch until smooth. Add the eggs and sugar, whisking until fully combined.
Pour the mixture into a saucepan and cook over medium-low heat, stirring constantly until it thickens (about 5–7 minutes).
Remove from heat, stir in the butter until melted and glossy.
Transfer to a bowl, cover with plastic wrap (touching the surface to prevent a skin), and let it cool completely in the refrigerator. - Prepare the Mascarpone Cream:
In a large bowl, beat the mascarpone, sugar, and vanilla together until smooth.
In another bowl, whip the heavy cream to soft peaks.
Gently fold the whipped cream and lemon zest into the mascarpone mixture until creamy and airy. - Assemble the Tiramisu:
Dip each ladyfinger lightly into the cooled lemon syrup (don’t soak them too much).
Arrange a layer of soaked biscuits in the bottom of a rectangular dish (about 20x20 cm / 8x8 inch).
Spread half of the mascarpone cream evenly over the layer.
Spoon over half of the lemon curd and gently swirl it into the cream.
Repeat with another layer of dipped ladyfingers, then the remaining mascarpone and lemon curd.
Smooth the top and refrigerate for at least 4 hours, preferably overnight, for the best flavor and texture. - Serve:
Before serving, garnish with a few curls of lemon zest, mint leaves, or a light dusting of icing sugar for a bright finish.
