Hubby’s Favourite One-Pan Cheesy Beef & Veggie Skillet

When life gets hectic, and the last thing you want is to spend hours in the kitchen, this one-pan dish comes to the rescue. Ground beef, colorful vegetables, tender noodles, and melted cheese all come together in a skillet to create a meal that’s hearty, comforting, and fuss-free.
It’s my husband’s absolute favorite, and I love it because it’s quick to make yet feels like a treat. Perfect for weeknight dinners, busy family nights, or even a last-minute lunch that impresses without stress.
Ingredients (Serves 4)
For the skillet:
- 1 lb (≈450 g) ground beef (or thinly sliced steak strips for extra flavor)
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, sliced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika (smoked paprika adds depth)
- Salt and freshly ground black pepper, to taste
For the noodles and cheese:
- 2 cups cooked elbow macaroni or egg noodles (pre-cooked to save time)
- 1 cup shredded cheddar cheese (or a blend of cheeses for extra creaminess)
Optional toppings:
- Fresh parsley, chopped
- Crushed red pepper flakes
- A dollop of sour cream
