- 5 oz (140 g) pancetta, diced
- 1 lb (450 g) hot Italian sausage
- 1 lb (450 g) ground beef
- 6 cloves garlic, crushed and chopped
- 1 cup (150 g) onion, chopped
- 3 tbsp (45 g) tomato paste
- 1 cup (240 ml) dry red wine
- 1/2 cup (120 ml) beef stock
- 2 (28 oz / 800 g each) cans crushed tomatoes
- 2 tsp (10 g) sugar
- 1/2 cup (20 g) fresh basil, chopped
- 3 tbsp (12 g) fresh parsley, chopped
- 2 tbsp (6 g) fresh oregano, chopped
- Salt and pepper, to taste
For the Ricotta Layer:
- 16 oz (450 g) ricotta cheese
- 5 oz (140 g) fontina cheese, grated
- 1 large egg plus 1 egg yolk
- 1/4 tsp ground nutmeg
For the Lasagna Assembly:
- 15 lasagna noodles, cooked and drained
- 8 oz (225 g) mozzarella cheese, shredded
- 1/2 cup (50 g) Parmesan cheese, finely grated
