- Preheat your oven to 220°C (425°F). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
- Spread the frozen tater tots in a single layer on the baking sheet. Drizzle with olive oil and sprinkle lightly with salt.
- Bake for 25–30 minutes, flipping halfway through, until the tots are deeply golden and extra crispy. You should hear a satisfying crunch when they’re done.
- While the tots bake, heat a skillet over medium heat. Add the cooked ground beef or chicken, then season with smoked paprika, garlic powder, cumin, salt, and pepper. Stir until warmed through and fragrant.
- Remove the tater tots from the oven and reduce the oven temperature to 200°C (400°F). Push the tots slightly closer together to create a base.
- Sprinkle the shredded cheddar and mozzarella evenly over the hot tots, making sure to reach the edges so every bite gets cheese.
- Scatter the seasoned meat evenly over the cheese layer. Add olives or jalapeños at this stage if using.
- Return the baking sheet to the oven and bake for 8–10 minutes, until the cheese is fully melted, bubbly, and lightly golden in spots.
- Remove from the oven and let rest for 2–3 minutes. This helps the toppings settle and makes serving easier.
- Finish with dollops of sour cream, spoonfuls of guacamole, diced tomatoes, green onions, cilantro, and a drizzle of nacho cheese sauce if desired. Serve immediately while hot and melty.
