Swiss Roll Cookies and Cream Cake

Directions

  1. Bake the cake layers: Prepare the Devil’s Food cake mix according to package directions. Divide the batter into two greased 9-inch cake pans. Bake as directed and allow cakes to cool completely.
  2. Level the cakes: Once cooled, trim the tops of both cakes with a straight knife so they are flat. This ensures a stable base for layering.
  3. Add the chocolate frosting layer: Spread a generous layer of chocolate frosting over the top of one cake. Carefully place the second cake on top.
  4. Frost the sides: Use the remaining chocolate frosting to cover the sides of both stacked cakes. Smooth it out for a clean finish.
  5. Top with vanilla frosting: Spread the vanilla frosting evenly across the top layer. For a decorative touch, use a round frosting tip or a corner cut from a plastic bag to pipe swirls or patterns. You can also simply spread it evenly for a classic look.
  6. Attach the Swiss rolls: Remove the Swiss rolls from packaging and trim about 1/2 inch from the top so they align neatly above the cake layers. Press the flat sides of the Swiss rolls against the sides of the frosted cake, covering the entire circumference. Tie a small ribbon around the cake to hold the Swiss rolls in place if desired.
  7. Add cookie garnish: Sprinkle the crushed chocolate crème sandwich cookies over the top of the cake, covering the vanilla frosting layer evenly.
  8. Chill and serve: Place the cake in the refrigerator for at least 30 minutes before serving to allow everything to set. Slice carefully and enjoy the combination of soft cake, creamy frosting, and crunchy cookies.
