Directions
- In a large skillet over medium heat, cook chopped bacon until crisp, about 8–10 minutes. Remove with a slotted spoon and set aside, leaving 2–3 tablespoons of bacon fat in the skillet.
- Add chopped onion to the skillet and sauté until soft and caramelized, about 5–7 minutes. Add garlic and cook for another 1–2 minutes.
- Return the bacon to the skillet and stir to combine with the onions and garlic.
- Add brown sugar, balsamic vinegar, maple syrup, and crushed red pepper flakes. Stir well and bring to a simmer.
- Reduce heat to low and cook, stirring occasionally, until the mixture thickens and becomes jam-like, about 15–20 minutes.
- Optional: Stir in coffee or espresso for an extra layer of flavor. Adjust seasoning with salt and black pepper to taste.
- Remove from heat and let cool slightly. Transfer to a food processor or use an immersion blender to achieve a smoother texture, if desired.
- Store in an airtight container in the refrigerator for up to 2 weeks.
