Sweet & Spicy Bacon Jam

Directions

  1. In a large skillet over medium heat, cook chopped bacon until crisp, about 8–10 minutes. Remove with a slotted spoon and set aside, leaving 2–3 tablespoons of bacon fat in the skillet.
  2. Add chopped onion to the skillet and sauté until soft and caramelized, about 5–7 minutes. Add garlic and cook for another 1–2 minutes.
  3. Return the bacon to the skillet and stir to combine with the onions and garlic.
  4. Add brown sugar, balsamic vinegar, maple syrup, and crushed red pepper flakes. Stir well and bring to a simmer.
  5. Reduce heat to low and cook, stirring occasionally, until the mixture thickens and becomes jam-like, about 15–20 minutes.
  6. Optional: Stir in coffee or espresso for an extra layer of flavor. Adjust seasoning with salt and black pepper to taste.
  7. Remove from heat and let cool slightly. Transfer to a food processor or use an immersion blender to achieve a smoother texture, if desired.
  8. Store in an airtight container in the refrigerator for up to 2 weeks.
