Sweet Blueberry Biscuits
Introduction
The first time I tasted blueberry biscuits was during a quiet bed-and-breakfast getaway, long before kids and busy schedules entered the picture. They were warm, tender, and bursting with juicy berries—one of those simple foods that sticks with you. Years later, after moving far from any place that sold them, the craving came back strong. With a basket of fresh blueberries and a little kitchen experimenting, these sweet blueberry biscuits were born. They’re buttery, fluffy, slightly sweet, and finished with a light vanilla glaze that melts right into every bite.
Ingredients
For the Biscuits
- • All-purpose flour: 250 g (2 cups)
- • Baking powder: 12 g (1 tablespoon)
- • Salt: 9 g (1½ teaspoons)
- • Granulated sugar: 38 g (3 tablespoons)
- • Unsalted butter, very cold: 113 g (½ cup / 1 stick)
- • Buttermilk: 180 ml (¾ cup, plus a little more if needed)
- • Blueberries, frozen (or fresh frozen overnight): 150 g (1 cup)
- • Salted butter, melted: 57 g (¼ cup / ½ stick)
For the Vanilla Glaze
- • Powdered sugar: 120 g (1 cup)
- • Milk: 45 ml (3 tablespoons, more if needed)
- • Vanilla extract: 2.5 ml (½ teaspoon)
