Ingredients

For the Chicken:

  • 900 g (2 lb) boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tablespoons (30 ml) vegetable oil

For the Sauce:

  • 240 ml (1 cup) pineapple juice
  • 120 g (1/2 cup) brown sugar, packed
  • 60 ml (1/4 cup) soy sauce
  • 2 tablespoons (30 ml) rice vinegar
  • 2 tablespoons (30 ml) ketchup
  • 1 tablespoon (15 g) cornstarch
  • 2 tablespoons (30 ml) water

For the Pineapple and Vegetables:

  • 1 medium red bell pepper, cut into chunks
  • 1 medium green bell pepper, cut into chunks
  • 1 small onion, cut into chunks
  • 225 g (1 cup) fresh or canned pineapple chunks

For Garnish:

  • 2 green onions, sliced
  • 1 teaspoon (5 g) sesame seeds (optional)
