Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, mix French onion soup mix, Russian dressing, and apricot preserves until well combined.
  3. Place chicken pieces in a baking pan and sprinkle lightly with black pepper.
  4. Pour the sauce mixture over the chicken, ensuring each piece is well coated.
  5. Roast uncovered in the preheated oven for 1 hour to 1 hour 15 minutes, basting several times during cooking.
  6. Chicken is done when it is golden brown, cooked through, and juices run clear. Serve hot.
