Strawberry Tarts with Pastry Cream

Assembling the Tart:

  1. Fill the cooled tart shells with pastry cream to the top.
  2. Arrange the strawberries over the cream. You can leave them whole or halve them and place them upright to cover the surface completely.
  3. Brush the strawberries with clear jelly to give a shiny finish and preserve freshness.

Notes

  • You can make the tart dough and pastry cream a day in advance to save time.
  • For a more intense flavor, you can add a few drops of almond extract to the pastry cream.
  • Use ripe, firm strawberries for best results.
