Assembling the Tart:
- Fill the cooled tart shells with pastry cream to the top.
- Arrange the strawberries over the cream. You can leave them whole or halve them and place them upright to cover the surface completely.
- Brush the strawberries with clear jelly to give a shiny finish and preserve freshness.

- You can make the tart dough and pastry cream a day in advance to save time.
- For a more intense flavor, you can add a few drops of almond extract to the pastry cream.
- Use ripe, firm strawberries for best results.
