Directions
- Preheat oven: Preheat your oven to 350°F (180°C). Line a baking sheet or tray with aluminum foil or parchment paper.
- Prepare ribs: Remove the tough membrane from the underside of the ribs (the bony side). This helps the ribs become tender and allows the flavors to penetrate better.
- Season ribs: In a small bowl, mix together garlic powder, onion powder, paprika, salt, pepper, cumin, and chili or cayenne (if using). Sprinkle the seasoning evenly over both sides of the ribs. Drizzle with olive oil and rub thoroughly to coat.
- Bake ribs: Cover the tray with foil and bake in the preheated oven for 2 hours. This slow baking allows the ribs to become tender and juicy.
- Prepare sauce: While the ribs are baking, combine all sauce ingredients in a small bowl and mix well. Set aside.
- Glaze ribs: After 2 hours, remove the foil from the ribs. Spread the barbecue sauce mixture evenly over the top of the ribs.
- Caramelize: Increase the oven temperature to 460°F (240°C). Return the ribs, uncovered, to the oven and bake for an additional 10 minutes. Then switch the oven to broil (or grill) on medium-high and cook for 2–3 minutes to achieve a sticky, caramelized finish. Watch closely to avoid burning.
- Rest and serve: Remove ribs from the oven and let them rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat for maximum tenderness. Slice between the bones and serve hot.
