Directions
- In a large mixing bowl, combine warm milk, sugar, melted butter, eggs, and salt. Whisk until smooth and slightly frothy.
- In a separate bowl, mix the all-purpose flour with dry yeast. Gradually add the dry ingredients to the wet mixture. Knead for 10–12 minutes by hand or in a stand mixer with a dough hook until the dough is smooth, slightly sticky, and elastic.
- Shape the dough into a ball and place it in a greased bowl. Cover with plastic wrap or a clean kitchen towel and let it proof in a warm spot for 1 hour, or until it doubles in size.
- After the first rise, punch down the dough and divide it into 12 equal portions. Roll each portion into a smooth ball. Let them rest for 30 minutes.
- Flatten each dough ball into a disk using the palm of your hand. Place a piece of dark chocolate in the center and pinch the edges tightly to encase the chocolate completely, forming a ball again.
- Arrange the filled brioche balls on a 20 x 20 cm (8 x 8 inch) greased or parchment-lined baking sheet, leaving some space between them. Allow them to proof for an additional 30 minutes.
- Preheat your oven to 180°C (350°F). Brush each brioche with the beaten egg and sprinkle chocolate chips on top for extra indulgence.
- Bake for 20 minutes, or until the brioche tops are golden brown and slightly puffed. Allow them to cool for a few minutes before serving to let the chocolate set slightly.
