Spinach Mushroom Orzo
A cozy, comforting dish that feels a little fancy but is super easy to make. This Spinach Mushroom Orzo is creamy (without being heavy), packed with savory mushrooms, tender orzo, and fresh spinach. Perfect as a vegetarian main or a flavorful side.
Ingredients
- 1 cup orzo pasta
- 2 tbsp olive oil or butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 250 g (8–9 oz) mushrooms, sliced (button, cremini, or a mix)
- 2 cups fresh spinach, roughly chopped
- 2½ cups vegetable broth (or chicken broth)
- ¼ cup grated Parmesan (optional, for extra creaminess)
- Salt and black pepper, to taste
- ½ tsp dried thyme or Italian seasoning
- A squeeze of lemon juice (optional, but lovely)
