- Preheat your oven.
Set your oven to 190°C (375°F). Lightly grease a small baking dish (around 20 cm / 8-inch square) to prevent sticking and help the edges crisp nicely. - Prepare the spinach.
Make sure your thawed spinach is very well drained—excess water will make the dip runny. Squeeze it firmly using your hands or a clean kitchen towel until it feels dry. - Mix the creamy base.
In a medium bowl, combine cream cheese, sour cream, and mayonnaise. Use a whisk or spatula to blend until smooth and fluffy. The mixture should look pale and glossy. - Add the chopped vegetables.
Stir in the spinach and artichoke hearts. You’ll notice the dip gaining texture and color as the greens distribute through the creamy base. - Fold in the cheeses.
Add mozzarella, Parmesan, and Romano. Reserve a small handful of mozzarella for topping. The mixture will become thick and hearty, with a cheesy aroma starting to bloom. - Season generously.
Sprinkle in garlic powder, onion powder, salt, pepper, and red pepper flakes. Stir thoroughly to make sure the flavors are evenly distributed. Taste a small spoonful to adjust seasoning if needed. - Transfer to the baking dish.
Spoon the mixture into your prepared dish, smoothing the top. Sprinkle the reserved mozzarella over the surface for a golden, bubbling finish. - Bake until hot and bubbly.
Place in the oven and bake for 20–25 minutes, or until the edges are lightly browned and the top is melted and bubbly. The aroma at this point should be irresistible—cheesy, garlicky, warm, and comforting. - Serve warm.
Let the dip rest for 5 minutes before serving. This allows it to thicken slightly while staying perfectly creamy.
