Southern Squash Casserole

Directions

  1. Preheat the oven to 350°F (175°C). Spray an 8-inch or 9-inch square baking dish with cooking spray and set aside.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced squash, diced onion, and red bell pepper. Cook and stir for about 10 minutes, or until the vegetables are tender. Remove from heat and season with salt and pepper.
  3. In a separate bowl, whisk together the eggs, grated cheddar cheese, sour cream, and mayonnaise until smooth.
  4. Stir the egg mixture into the cooked squash mixture until evenly combined.
  5. Transfer the squash mixture into the prepared baking dish, spreading it out evenly.
  6. In another small bowl, combine the crushed crackers with the remaining 1 tablespoon of melted butter. Sprinkle the buttered cracker crumbs evenly over the top of the casserole.
  7. Bake in the preheated oven for 30–35 minutes, or until the casserole is set and the topping is golden brown.
  8. Remove from the oven and let cool for a few minutes before serving.
