Step 1: Brown the Ground Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and transfer the beef to the slow cooker.
Step 2: Add Aromatics and Potatoes
Add diced onion, minced garlic, and diced potatoes to the slow cooker with the beef. Stir to combine evenly.
Step 3: Prepare the Sauce
In a medium bowl, whisk together cream of mushroom soup, milk, Worcestershire sauce, salt, black pepper, and optional thyme or Italian seasoning. Pour the sauce over the beef and potatoes in the slow cooker, stirring gently to coat.
Step 4: Cook
Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender and the flavors have melded together.
Step 5: Add Cheese
About 15 minutes before serving, sprinkle shredded cheddar cheese over the top of the casserole. Cover and let the cheese melt completely.
Step 6: Serve
Garnish with fresh parsley if desired. Serve warm, straight from the slow cooker for a comforting, family-friendly meal.
