Directions

  1. Prepare the Glaze: In a medium bowl, whisk together orange juice, lemon juice, soy sauce, honey, and grated ginger until well combined.
  2. Place Pork Chops in Slow Cooker: Arrange pork chops in a single layer at the bottom of the slow cooker.
  3. Add the Glaze: Pour the citrus-ginger mixture evenly over the pork chops.
  4. Cook: Cover and cook on low for 4–5 hours, or until the pork chops are tender and fully cooked (internal temperature should reach 145°F / 63°C).
  5. Optional Thickening: For a thicker glaze, transfer the sauce to a small saucepan after cooking. Simmer over medium heat for 5–7 minutes until it reduces to your desired consistency, then pour over the pork chops.
  6. Serve: Garnish with chopped green onions or fresh cilantro if desired. Pair with jasmine rice, mashed potatoes, or steamed vegetables to complete the meal.
