In a skillet over medium heat, cook the chopped bacon until slightly crispy, about 5 minutes. Remove from heat and drain excess fat if desired, leaving a little for flavor.

Step 3: Combine Ingredients in Slow Cooker

Add the black-eyed peas, sautéed bacon, chopped onion, minced garlic, smoked paprika, thyme, black pepper, and bay leaf (if using) to the slow cooker. Pour in the broth and stir gently to combine.

Step 4: Cook

Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours, until the black-eyed peas are tender and flavors have melded together. Stir occasionally if possible.

Step 5: Season and Finish
