Step 1: Prepare the Ingredients

Step 3: Combine Ingredients in Slow Cooker
Add the black-eyed peas, sautéed bacon, chopped onion, minced garlic, smoked paprika, thyme, black pepper, and bay leaf (if using) to the slow cooker. Pour in the broth and stir gently to combine.
Step 4: Cook
Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours, until the black-eyed peas are tender and flavors have melded together. Stir occasionally if possible.
Step 5: Season and Finish
Taste the black-eyed peas and add salt as needed. For extra brightness, stir in 1–2 teaspoons of apple cider vinegar just before serving.
Step 6: Serve
Serve warm, garnished with chopped fresh parsley. This dish pairs beautifully with cornbread, rice, or roasted vegetables.
