Slow-Cooked Garlic Butter Chicken & Ribeye Steaks with Creamy Parmesan Mashed Potatoes

Directions

  1. Prepare the Chicken in the Slow Cooker: Place the chicken breasts in the slow cooker. Add 2 tbsp (30 g) butter, minced garlic, dried rosemary, and season generously with salt and pepper.
  2. Cook the Chicken: Cover and cook on low for 4–6 hours until the chicken is tender and infused with garlic and butter flavors. The slow cooking process allows the chicken to soak in the richness of the butter and aroma of rosemary.
  3. Sear the Ribeye Steaks: While the chicken is cooking, heat olive oil in a skillet over medium-high heat. Season the ribeye steaks on both sides with salt and pepper. Sear each side for 3–4 minutes (or longer depending on your preferred doneness), creating a golden crust while keeping the interior juicy. Remove steaks from the skillet and let them rest for a few minutes to retain juices.
  4. Cook the Potatoes: Bring a pot of salted water to a boil. Add the peeled and chopped potatoes, and cook for about 15 minutes, or until fork-tender. Drain well.
  5. Make the Mashed Potatoes: Return the drained potatoes to the pot or a large bowl. Add the remaining 2 tbsp (30 g) butter, heavy cream, and grated Parmesan cheese. Mash until smooth and creamy. Season with salt and pepper to taste. The Parmesan adds a nutty depth and luxurious texture to the mash.
  6. Serve: Plate the slow-cooked garlic butter chicken alongside the seared ribeye steaks and creamy Parmesan mashed potatoes. Spoon a little of the butter-garlic juices from the slow cooker over the chicken for extra flavor. Garnish with a sprinkle of fresh rosemary or cracked black pepper if desired.
