Shrimp, Sausage, Corn & Potato Skewers

Directions

  1. Bring a pot of salted water to a boil over medium heat. Add the potatoes and cook for 12–15 minutes, until just tender.
  2. Drain the potatoes and rinse briefly under cold water to stop the cooking.
  3. Assemble the skewers by threading potatoes, corn, sausage, and prawns, alternating ingredients evenly.
  4. Preheat the grill to medium-high heat and lightly oil the grill grates.
  5. In a small bowl, mix the melted butter, Tabasco, and mixed spices until well combined.
  6. Place the skewers on the grill and cook for about 8 minutes, turning occasionally.
  7. Brush the skewers generously with the spicy butter mixture while grilling, allowing the corn to lightly char and the prawns to heat through.
  8. Remove from the grill once the corn begins to caramelize and everything is heated and lightly browned.
  9. Serve hot with lemon slices on the side.
