Shrimp and Cucumber Salad

Directions:

  1. Prepare the Shrimp: If using pre-cooked shrimp, thaw and drain them well. If cooking fresh shrimp, boil or sauté until pink and opaque, then allow to cool.
  2. Prepare the Vegetables: Slice cucumbers and red onion, halve cherry tomatoes, and chop fresh dill. Arrange greens on a serving platter or in a large bowl if using.
  3. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, white wine vinegar, Dijon mustard, and honey (if using). Season with salt and pepper and whisk until smooth.
  4. Assemble the Salad: In a large mixing bowl, combine shrimp, cucumber, red onion, and cherry tomatoes. Pour dressing over the mixture and toss gently to coat evenly. Sprinkle chopped dill on top.
  5. Serve: Serve immediately or chill in the fridge for 15–30 minutes to enhance flavors. Enjoy on a bed of greens or on its own as a light, refreshing meal.
