Ingredients
For the Broth:
- 6 cups (1.4 L) chicken broth
- 1/4 teaspoon saffron threads
- 1/2 teaspoon salt
For the Paella:
- 3 tablespoons (45 ml) olive oil
- 1/2 cup (80 g) onion, diced
- 1/2 cup (75 g) red bell pepper, peeled, cored, and diced
- 2 1/2 teaspoons garlic, minced
- 1/2 teaspoon smoked paprika
- 2 1/4 cups (450 g) short-grain rice such as bomba, calasparra, or arborio
- 8 ounces (225 g) Spanish chorizo, sliced
- 12 ounces (340 g) shrimp, peeled and deveined
- 8 ounces (225 g) mussels, cleaned
- 12 ounces (340 g) clams, cleaned
- 1/4 cup (35 g) frozen peas, thawed
- 2 tablespoons (8 g) parsley, chopped
- Lemon wedges for garnish
- Salt and pepper to taste
