Instructions
- Preheat the oven to 350°F (175°C).
- Cook the macaroni according to package directions. Drain well and place in a large mixing bowl.
- Add the sour cream to the macaroni and stir until all noodles are coated.
- Stir in the crab meat gently. Set aside.
- Melt the butter in a medium saucepan or skillet over medium heat. Add the shrimp and cook until lightly pink. Remove and let cool slightly, then chop and add to the macaroni mixture.
- In the same pan, sauté the chopped spring onion until tender. Sprinkle flour over the onions and cook for about one minute to form a roux.
- Gradually add the evaporated milk, stirring constantly until the mixture begins to thicken.
- Stir in the grated cheddar cheese slowly until melted and smooth. Pour the cheese mixture over the macaroni and seafood mixture and stir until fully combined. Season with salt and black pepper to taste.
- Transfer the mixture to a well-buttered baking dish. Top with grated mozzarella cheese, then sprinkle the panko bread crumbs evenly over the top. Lightly dust with paprika for color.
- Bake in the preheated oven for 20–25 minutes, or until the top is lightly browned and bubbly.
- Remove from the oven and serve warm.
