Scotcheroos Recipe

Directions

  1. Prepare the Pan: Line a 9x13-inch (23x33 cm) baking dish with parchment paper or lightly grease it. This ensures easy removal of the bars after chilling.
  2. Mix the Base: In a medium saucepan over medium heat, combine the peanut butter, sugar, and corn syrup. Stir constantly until the mixture begins to boil and becomes smooth. This creates the signature sweet and slightly chewy binding for the cereal.
  3. Add Vanilla: Remove the pan from heat and stir in the vanilla extract. The vanilla adds a subtle depth that enhances the peanut butter and chocolate flavors.
  4. Combine with Cereal: Pour the peanut butter mixture over the crispy rice cereal in a large bowl. Use a spatula to fold until every piece of cereal is coated evenly, ensuring a crunchy yet sticky base.
  5. Press into Pan: Transfer the mixture into the prepared baking dish. Use a spatula or lightly greased hands to press the cereal mixture evenly into the pan. Work quickly before the mixture begins to set.
  6. Prepare Topping: In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  7. Spread Topping: Pour the melted chocolate and butterscotch mixture evenly over the pressed cereal base. Use a spatula to smooth the top into an even layer.
  8. Chill: Refrigerate the Scotcheroos for at least 1–2 hours or until the topping is firm. This allows the bars to set properly, making them easier to cut.
  9. Cut and Serve: Lift the set bars from the pan using the parchment paper. Cut into squares or rectangles and serve. These bars are perfect as a snack, dessert, or lunchbox treat.
