Step 2: Sear the Patties
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the patties and sear for 3–4 minutes per side until browned. Remove patties from the skillet and set aside.
Step 3: Cook the Potatoes and Onions
In the same skillet, add remaining olive oil. Sauté the onions until soft and translucent, about 5 minutes. Add garlic and cook for 30 seconds. Stir in diced potatoes, salt, and pepper. Cook for 8–10 minutes until potatoes start to brown.
Step 4: Make the Gravy
Sprinkle flour over the onions and potatoes. Stir to coat and cook for 1–2 minutes. Slowly pour in beef broth while stirring to prevent lumps. Add thyme and bring to a gentle simmer.
Step 5: Combine Patties and Skillet
Return the browned patties to the skillet, nestling them among the potatoes and onions. Cover and simmer for 10–12 minutes, until the patties are cooked through and the potatoes are tender.
Step 6: Serve
Garnish with freshly chopped parsley and serve hot directly from the skillet for a hearty, satisfying meal.
