Step 1: Prepare the Shrimp
Pat shrimp completely dry with paper towels. Season lightly with salt and pepper just before cooking. Keeping them dry ensures a better sear.
Step 2: Make the Sauce
In a small bowl, whisk together soy sauce, sesame oil, lime juice, brown sugar, rice vinegar, water, and cornstarch. Whisk thoroughly to dissolve the sugar and prevent lumps. Set aside.
Step 3: Cook the Vegetables
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat until shimmering.
Add broccoli in a single layer, cut-side down. Cook 2–3 minutes undisturbed to allow light charring.
Stir and cook another 2–3 minutes until crisp-tender.
Add red onion and garlic; sauté 1 minute until fragrant.
Remove vegetables from the pan and set aside.
Step 4: Cook the Shrimp
Add remaining tablespoon oil to the pan. Arrange shrimp in a single layer.
Cook 1–2 minutes per side until pink and just opaque. Avoid overcooking.
Step 5: Final Assembly
Return broccoli mixture to the skillet.
Give the sauce a quick stir and pour into the pan.
Cook, stirring constantly, until the sauce thickens and coats everything evenly (about 1–2 minutes).
Remove from heat and sprinkle with green onions.
