Instructions

Sausage Roasting:

  1. Heat olive oil over medium heat in a large skillet with a lid. Add the sausages and cook slowly.

  2. Adjust the heat if they sizzle too much; you want them browned, not burnt. Turn occasionally until sausages are evenly browned. Remove and set aside.

Frying Onions, Peppers, and Garlic:

3. Turn the heat to high and add the onions and peppers. Stir to coat them in the oil and sear slightly.
4. Once softened, sprinkle with a little salt. Add garlic and cook for another minute.

Combine Everything:

5. Add the crushed tomatoes, oregano, and red pepper flakes (if using). Stir to combine.
6. Return sausages to the skillet, reduce heat to low, cover, and simmer for about 20 minutes until peppers are tender and sausages are fully cooked.
