Roasted Vegetables

Directions

  1. Preheat the oven to 200°C (400°F) and line a 13-inch baking sheet with a rim.
  2. Add bell peppers, zucchini, broccoli, carrots, and red onion to the baking sheet. Drizzle with olive oil.
  3. Sprinkle Italian seasoning, minced garlic, salt, and pepper over the vegetables. Toss until everything is evenly coated.
  4. Roast in the preheated oven for 15 minutes.
  5. Remove the baking sheet from the oven, add the grape tomatoes, and toss to combine.
  6. Return the vegetables to the oven and roast for an additional 10 minutes, until tender and slightly caramelized.
  7. Remove from the oven, drizzle with fresh lemon juice, and serve immediately.
