Instructions
- In a medium bowl, combine pepper, dry parsley, lemon & herb spice, peri-peri sauce, olive oil, lemon juice, chopped coriander, and chili flakes. Mix well to form a marinade.
- Rub the marinade all over the half chicken, making sure it’s coated evenly.
- Cover the chicken and let it marinate in the fridge for at least 4 hours, or overnight for maximum flavor.
- Preheat your oven to 200°C (392°F).
- Place the marinated chicken on a roasting tray and roast in the oven for 45 minutes. Check for doneness: the juices should run clear, and the internal temperature should reach 75°C (165°F).
- Remove the chicken from the oven and let it rest for 5–10 minutes before slicing.
- Serve hot with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
