Directions
Prepare the Fries:
- Preheat the oven to 220°C (425°F).
- In a large bowl, toss the cut potatoes with vegetable oil, salt, pepper, and optional seasonings.
- Spread the fries in a single layer on a baking sheet.
- Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
Cook the Steak:
5. Season both sides of the ribeye steaks with salt and pepper.
6. Heat olive oil in a large skillet over medium-high heat until hot.
7. Add the steaks and sear for 3–4 minutes per side, or until they reach your desired level of doneness.
8. During the last 2 minutes of cooking, add butter, smashed garlic, and rosemary or thyme to the pan. Spoon the melted butter over the steaks for extra flavor.
Caramelize the Onions:
9. In the same skillet (after removing the steaks), add the sliced onions and cook over medium heat until soft and golden brown, about 5–7 minutes.
Serve:
10. Plate the steaks, top with caramelized onions, and serve alongside the crispy fries. Add a wedge of lemon or extra herbs if desired.
