Instructions

  1. Preheat your oven to 500°F (260°C).
  2. Place the prime rib roast on a rack in a roasting pan. Rub all sides with olive oil, then season generously with salt and pepper.
  3. If desired, insert garlic cloves into the meat using a paring knife for extra flavor.
  4. Roast in the preheated oven for 15 minutes to sear the outside and lock in juices.
  5. Reduce the oven temperature to 325°F (160°C) and continue roasting until the internal temperature reaches your desired doneness:
    • Medium-rare: 135°F (57°C)
    • Medium: 140°F (60°C)
    • Well-done: 150°F (66°C)
  6. Remove the roast from the oven and let it rest for 15–20 minutes, tented with foil, to allow the juices to redistribute.
  7. Slice the prime rib into thick, juicy portions and serve immediately.
