Directions

  1. Boil the potatoes: Place the potatoes in a large pot with plenty of water. Bring to a boil over medium-high heat and cook until tender, about 15–20 minutes. Drain and let them cool completely.
  2. Mash the potatoes: Peel the cooled potatoes and mash them with a fork until smooth.
  3. Prepare the potato dough: Add the egg, breadcrumbs, salt, pepper, and rosemary to the mashed potatoes. Mix thoroughly until the mixture forms a workable dough.
  4. Shape the sandwiches: Take a portion of the potato mixture and shape it into small squares, about the size of your palm.
  5. Fill the sandwiches: Place a slice of ham and a slice of cheese on each square. Fold or press the potato around the filling to seal completely.
  6. Cook the sandwiches: Heat olive oil or butter in a non-stick skillet over medium heat. Place the filled potato sandwiches in the pan and cook for about 5 minutes on each side, or until golden brown and crispy.
  7. Serve: Remove from the pan and serve hot. These potato sandwiches are perfect as a snack, appetizer, or a light meal.
