Directions

  1. Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15–20 minutes. Drain and mash until smooth.
  2. Add the chopped onion, chives, parsley, pepper, and salt to the mashed potatoes. Mix until well combined.
  3. Incorporate the starch or flour into the mixture to help bind the dumplings.
  4. Grease your hands with a little oil and form the potato mixture into small balls. Press a small cube of mozzarella into the center of each ball, if desired.
  5. Heat vegetable oil in a frying pan over medium heat. Carefully place the dumplings in the hot oil.
  6. Fry the dumplings, turning occasionally, until they are golden brown on all sides. This should take about 5–7 minutes per batch.
  7. Remove the dumplings from the oil and drain on paper towels. Serve warm.
