Directions
- Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15–20 minutes. Drain and mash until smooth.
- Add the chopped onion, chives, parsley, pepper, and salt to the mashed potatoes. Mix until well combined.
- Incorporate the starch or flour into the mixture to help bind the dumplings.
- Grease your hands with a little oil and form the potato mixture into small balls. Press a small cube of mozzarella into the center of each ball, if desired.
- Heat vegetable oil in a frying pan over medium heat. Carefully place the dumplings in the hot oil.
- Fry the dumplings, turning occasionally, until they are golden brown on all sides. This should take about 5–7 minutes per batch.
- Remove the dumplings from the oil and drain on paper towels. Serve warm.
