- Prepare the pan: Line a 12-cup muffin tin with paper cupcake liners. If you prefer smaller bites, use mini liners and a mini muffin tin.
- Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips with coconut oil or butter in 30-second intervals, stirring each time, until smooth and glossy. You can also melt it gently over a double boiler.
- Form the bottom chocolate layer: Spoon about 1 teaspoon of melted chocolate into each liner, spreading it slightly to coat the bottom. Tap the pan gently to smooth the layer. Place in the freezer for about 10 minutes to set.
- Make the peanut butter filling: In a small bowl, mix peanut butter, powdered sugar, butter, salt, and vanilla until smooth and creamy. The texture should be thick enough to roll into small discs without sticking to your hands.
- Add the filling: Once the chocolate layer has set, scoop about 1 teaspoon of the peanut butter mixture, roll it into a small ball, and flatten it slightly. Place it on top of the hardened chocolate in each liner.
- Top with more chocolate: Spoon another teaspoon (or more, if desired) of melted chocolate over each peanut butter disc, ensuring it’s completely covered. Smooth the tops with the back of a spoon.
- Chill to set: Return the tray to the freezer for 20–30 minutes, or refrigerate for at least 1 hour, until the cups are firm.
- Serve and store: Peel off the paper liners and enjoy! Keep them refrigerated for the perfect bite — cold and creamy.
