Directions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Prepare Filling: In a large bowl, combine peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Stir gently to coat the peaches evenly. Pour the mixture into the prepared baking dish.
  3. Make Topping: In a medium bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla extract until just combined. Batter should be slightly thick but pourable.
  4. Assemble Cobbler: Pour topping evenly over the peach filling. Do not stir; the topping will spread and bake into a golden, biscuit-like crust.
  5. Bake: Bake for 40–45 minutes, or until topping is golden brown and peach filling is bubbly. A toothpick inserted in the center should come out clean.
  6. Cool & Serve: Let the cobbler cool 10–15 minutes before serving. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
