Pan Seared Steak with Shrimp & Lobster Sauce

Directions

Steak Preparation:

  1. Pat the steaks dry with paper towels to remove excess moisture.
  2. Season both sides generously with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Add steaks and press down firmly to ensure even searing. Cook for 2 minutes.
  4. Add minced garlic, butter, and thyme to the skillet. Continue cooking.
  5. Flip the steaks after 3 minutes and cook the other side for an additional 4 minutes. Make sure to sear all edges.
  6. Reduce heat to medium-low, spoon the melted butter and garlic over the steaks continuously. Cook until the internal temperature reaches 5°F (3°C) below your desired doneness.
  7. Remove the steaks from the skillet and let them rest for 10 minutes before serving.

Shrimp & Lobster Sauce:

  1. Season shrimp with all-purpose seasoning. Heat a skillet over medium heat with 1 tablespoon butter and 1 tablespoon olive oil. Sear shrimp 2 minutes per side, then set aside.
  2. Add 1 tablespoon butter to the same skillet and cook lobster chunks until pink, about 3 minutes. Set aside.
  3. Melt 6 tablespoons butter in the skillet, then add clam juice and white wine. Simmer gently.
  4. Stir in heavy cream and bring to a gentle boil. Add smoked paprika, garlic powder, onion powder, salt, and pepper. Reduce to medium-low heat and simmer 10 minutes, stirring occasionally.
  5. Adjust seasoning as needed. Add cooked shrimp and lobster to the sauce and cook 1–2 minutes.

Serving:

  1. Plate the rested steaks and generously spoon the shrimp and lobster cream sauce over them. Serve immediately with your favorite sides.
