Old Fashioned Salmon Patties

Instructions

  1. Open the salmon can and drain thoroughly. Place the salmon in a mixing bowl and flake with a fork until evenly broken up.
  2. Add the finely chopped onion, cornmeal, flour, egg, and mayonnaise. Stir until well combined.
  3. Shape the mixture into patties roughly the size of a standard burger.
  4. Heat a skillet over medium heat and add enough oil to coat the bottom.
  5. Cook the patties for 3–4 minutes per side, or until golden brown and cooked through. Turn carefully once during frying.
  6. Remove the patties from the skillet and drain briefly on paper towels before serving.
