Instructions
- Open the salmon can and drain thoroughly. Place the salmon in a mixing bowl and flake with a fork until evenly broken up.
- Add the finely chopped onion, cornmeal, flour, egg, and mayonnaise. Stir until well combined.
- Shape the mixture into patties roughly the size of a standard burger.
- Heat a skillet over medium heat and add enough oil to coat the bottom.
- Cook the patties for 3–4 minutes per side, or until golden brown and cooked through. Turn carefully once during frying.
- Remove the patties from the skillet and drain briefly on paper towels before serving.
