Directions
- Prepare the dough. In a large mixing bowl, combine the wheat flour, flour reinforcer, sugar, salt, and dry yeast. Mix well to distribute the ingredients evenly.
- Add wet ingredients. Add the egg, milk, margarine, and gradually the water. Knead the mixture until a soft, elastic dough forms that comes off the hands cleanly. Adjust water or flour slightly if necessary.
- First rise. Cover the dough and let it rise for 20 minutes in a warm spot. The dough should puff up slightly and feel airy.
- Shape the buns. Divide the dough into equal-sized balls. Roll each ball out with a rolling pin into a flat rectangle, then roll up lengthwise to form the “tongues.” Arrange the shaped dough on baking sheets lined with parchment paper, leaving some space between them.
- Second rise. Allow the rolled buns to rise for about 1 hour until slightly puffed and soft to the touch.
- Prepare the coconut topping. In a separate bowl, mix the shredded coconut with eggs and, if desired, a few drops of yellow food coloring to brighten the topping. Spread this mixture evenly over the risen buns.
- Bake the bread. Preheat the oven to 180°C (350°F). Bake the buns for about 30 minutes, or until the coconut topping is lightly golden and the bread is baked through.
- Prepare the syrup. While the bread is baking, combine water and sugar in a saucepan. Boil until the syrup reaches a thick, thread-like consistency. Remove from heat.
- Soak the hot bread. As soon as the buns come out of the oven, brush them generously with the hot syrup. Allow them to cool completely so the syrup can soak in, making the buns tender and flavorful.
- Serve. Slice or serve whole, enjoying the combination of sweet, soft bread with the slightly crunchy coconut topping.
