Mongolian Noodles with Ground Beef

Directions

  1. Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add ground beef and cook until browned and cooked through, breaking it into small pieces with a spatula. Drain excess fat if needed.
  3. Add sliced onions and garlic to the skillet, sautéing for 2–3 minutes until fragrant and slightly softened.
  4. In a small bowl, whisk together soy sauce, water, brown sugar, and cornstarch until smooth. Pour over the beef and onions. Stir and cook for 2–3 minutes until the sauce thickens.
  5. Add the shredded carrots or bell peppers (if using) and cook for another 2 minutes until tender-crisp.
  6. Toss the cooked noodles into the skillet with the beef and sauce until fully coated and heated through.
  7. Remove from heat and stir in sliced green onions. Sprinkle with crushed red pepper flakes if desired.
  8. Serve immediately in bowls, garnished with extra green onions or sesame seeds.
