Mixed Summer Berry Trifle

Directions

Prepare the Pudding:

  1. In a medium mixing bowl, whisk together 2 cups cold milk and vanilla instant pudding mix for 2 minutes.
  2. Refrigerate for 5 minutes to allow it to set.

Prepare the Cream Cheese Layer:

3. In a medium-large mixing bowl, combine cream cheese, ½ cup sugar, vanilla extract, and lemon juice.
4. Using a hand-held electric mixer, beat until smooth and fully combined. Set aside.

Assemble the Trifle:

5. Arrange half of the angel food cake cubes at the bottom of a trifle container or individual glasses.
6. Add a layer of berries, using slightly less than ⅓ of the strawberries, blackberries, and raspberries. For a clear container, alternate the berries for a visually appealing pattern.
7. Spread half of the cream cheese mixture evenly over the berries.
8. Layer half of the vanilla pudding mixture on top of the cream cheese, spreading evenly.
9. Repeat layers with remaining angel food cake, berries, cream cheese, and pudding. You should have 2 layers each of cake, berries, cream cheese, pudding, and 3 layers of mixed berries.
10. Top the final layer of berries with Cool Whip or whipped cream, shaping it into a "pillow" with a spatula. Garnish with remaining berries and optional mint leaves.
11. Serve immediately in individual parfait glasses or refrigerate until ready to serve.
