Meatball Soup

Instructions

  1. In a large heavy stockpot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, celery, and green beans. Cook 7–8 minutes until slightly soft and fragrant.
  3. Stir in parsley, oregano, basil, garlic powder, and onion powder. Cook for 2 minutes, stirring constantly.
  4. Pour in beef broth, tomato sauce, fire-roasted tomatoes, and meatballs. Simmer for 7–10 minutes.
  5. Add pasta and cook an additional 10 minutes, until pasta is tender. Serve promptly.
