Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.
Step 2: Cook the Chicken
Season chicken with salt, pepper, and garlic powder. In a large skillet over medium-high heat, heat olive oil and cook chicken until golden brown and cooked through, about 5–6 minutes. Remove chicken from the skillet and set aside.
Step 3: Prepare the Sauce
In the same skillet, add garlic and sauté for 30 seconds until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Add chopped sun-dried tomatoes and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.
Step 4: Add Cheese and Seasoning
Stir in grated Parmesan cheese until the sauce is creamy and smooth. Taste and adjust seasoning with salt and black pepper.
Step 5: Combine Chicken and Pasta
Return the cooked chicken to the skillet, then add the pasta. Toss to coat everything evenly in the sauce. If needed, add reserved pasta water a little at a time to reach your desired consistency.
Step 6: Serve
Transfer pasta to plates or a serving dish. Garnish with freshly chopped basil or parsley and additional Parmesan if desired. Serve immediately.
