Directions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 5–6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. Reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Stir in the chopped sun-dried tomatoes and cook for 1–2 minutes.
  5. Pour in the heavy cream and chicken broth, then stir in Parmesan cheese and Italian seasoning. Simmer for 3–4 minutes until the sauce thickens slightly.
  6. Return the chicken breasts to the skillet, spooning the sauce over them. Let simmer for an additional 2–3 minutes to warm the chicken and meld flavors.
  7. Garnish with fresh basil or parsley before serving.
