Directions
- Preheat oven to 175°C (350°F) and lightly grease a 20 cm (8-inch) springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of the pan to form the crust. Bake for 8–10 minutes, then set aside to cool.
- In a large mixing bowl, beat cream cheese until smooth. Add brown sugar, eggs, maple syrup, vanilla extract, and cinnamon. Beat until fully combined and creamy.
- Pour filling over the cooled crust and smooth the top.
- Bake for 35–40 minutes or until the center is just set. Remove from oven and allow to cool to room temperature.
- While the cheesecake cools, prepare the apple topping: melt butter in a skillet over medium heat. Add apple slices, brown sugar, and cinnamon. Cook 5–7 minutes until apples are tender but not mushy.
- Let apples cool slightly, then arrange on top of the cheesecake.
- Chill cheesecake in the refrigerator for at least 2 hours before serving. Slice and enjoy.
