Step 1: Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease.
Step 2: Sauté the Vegetables
In a medium skillet, melt butter over medium heat. Add onion, celery, bell pepper, and garlic. Sauté until soft and fragrant, about 4–5 minutes.
Step 3: Add the Seafood
Add shrimp and crawfish to the skillet, sprinkle with Cajun seasoning and paprika, and cook for 2–3 minutes until shrimp turn pink.
Step 4: Make the Filling Sauce
Sprinkle flour over the mixture, stirring to coat evenly. Gradually add heavy cream, stirring constantly until the mixture thickens. Season with salt and pepper to taste. Remove from heat and let cool slightly.
Step 5: Prepare the Pie Crust
Roll out the pie crust on a floured surface. Cut into squares or circles, about 4–5 inches in diameter for individual pies.
Step 6: Assemble the Pies
Place a generous spoonful of the seafood filling in the center of each crust piece. Fold over to create a pocket or triangle, sealing the edges with a fork. Brush tops with beaten egg for a golden finish.
Step 7: Bake
Place the pies on the prepared baking sheet. Bake for 20–25 minutes, or until crust is golden brown and crisp.
Step 8: Serve
Allow pies to cool for a few minutes before serving. Garnish with chopped parsley or a drizzle of hot sauce if desired.
