Ingredients
For the Chicken Bombs
• 900 g (2 lb) boneless, skinless chicken breasts or thighs
• 200 g (7 oz) cream cheese, softened
• 1 cup shredded cheddar or mozzarella cheese (110 g / 4 oz)
• 3–4 fresh jalapeños, seeded and finely chopped (about 80 g / 3 oz)
• 4 slices bacon, finely chopped (optional but recommended)
• 1 teaspoon garlic powder (3 g)
• 1 teaspoon onion powder (3 g)
• 1 teaspoon smoked paprika (3 g)
• Salt and black pepper, to taste
For Smoking & Glazing (Optional)
• 1 tablespoon olive oil (15 ml)
• 2 tablespoons BBQ sauce (30 ml), optional for brushing
