Directions
Step 1: Bake the Potatoes
Preheat the oven to 220°C (425°F). Scrub the potatoes clean and pat them dry. Rub each potato with olive oil and sprinkle evenly with salt. Place directly on the oven rack or on a baking tray. Bake for 50–60 minutes, until the skins are crisp and a fork slides easily into the center.
Step 2: Prepare the Steak
While the potatoes bake, place the steak cubes in a bowl. Toss with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated. Let rest at room temperature for about 10 minutes for better searing.
Step 3: Cook the Steak Bites
Heat a large skillet over medium-high heat. Add the seasoned steak bites in a single layer. Cook for 2–3 minutes per side until browned on the outside and cooked to your preferred doneness. Remove from heat and set aside, keeping them warm.
Step 4: Slice the Potatoes
Once baked, remove the potatoes from the oven. Let them cool slightly, then slice each potato lengthwise down the center. Gently fluff the inside with a fork.
Step 5: Add Butter and Cheese
Add a small amount of butter to each potato and sprinkle with shredded cheddar cheese. The heat from the potato will begin to melt the cheese, creating a creamy base.
Step 6: Load with Steak
Spoon the warm steak bites generously over each potato, letting the juices soak into the fluffy interior.
Step 7: Finish with Toppings
Top with sour cream, crumbled bacon, and sliced green onions. Add extra cheese or butter if desired.
Step 8: Serve Immediately
Serve hot while everything is melty and tender, with a fork ready to dig into every loaded bite.
