Best Lemon Loaf

Instructions

Step 1: Preheat Oven and Prep Pan

  • Preheat your oven to 350°F (175°C) and place the oven rack in the middle position. Grease a 9×5-inch loaf pan with nonstick baking spray.

Step 2: Mix Dry Ingredients

  • In a small bowl, whisk together the flour, salt, baking powder, and baking soda until evenly combined.

Step 3: Mix Wet Ingredients

  • In a large bowl, whisk together the eggs, sugar, lemon zest, lemon juice, oil, Greek yogurt, lemon extract, and vanilla extract until smooth and well combined.

Step 4: Combine Dry and Wet Ingredients

  • Add the dry ingredients to the wet ingredients and gently whisk until a thick batter forms. Do not overmix to keep the loaf tender.

Step 5: Bake

  • Pour the batter into the prepared loaf pan. Bake for 50–55 minutes, or until the top is golden brown, starts to pull away from the sides of the pan, and a toothpick inserted in the center comes out clean.

Step 6: Cool

  • Remove the cake from the oven and let it cool in the pan for 15 minutes. Then remove the loaf from the pan and allow it to cool completely, about 30 minutes.

Step 7: Glaze the Cake

  • Whisk together the confectioners’ sugar, lemon zest, lemon juice, and milk until smooth. Pour over the completely cooled loaf. Let the glaze set before slicing and serving.
