Jerk Steak & Shrimp over Yellow Rice
Ingredients:
For the protein:

- 1 lb Angus steak or boneless beef tri-tip, cut into cubes
- 1 lb large shrimp, peeled & deveined
- 2 tbsp jerk seasoning (store-bought or homemade)
- 2 tbsp olive oil (divided)
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- Juice of 1 lime
- Salt & black pepper, to taste
For the veggies:

- 1 cup red bell pepper, sliced
- 1 cup green bell pepper, sliced
- 1 small onion, sliced
For the rice:

- 2 cups yellow rice (you can use a packaged mix or make it with rice, turmeric/saffron, garlic, and chicken broth)
- 4 cups chicken broth
- 1 tbsp butter
Optional garnish: fresh parsley, extra lime wedges
