Jerk Steak & Shrimp over Yellow Rice

Ingredients:

For the protein:

    • 1 lb Angus steak or boneless beef tri-tip, cut into cubes
    • 1 lb large shrimp, peeled & deveined
    • 2 tbsp jerk seasoning (store-bought or homemade)
    • 2 tbsp olive oil (divided)
    • 2 cloves garlic, minced
    • 1 tbsp soy sauce
    • Juice of 1 lime
    • Salt & black pepper, to taste

For the veggies:

    • 1 cup red bell pepper, sliced
    • 1 cup green bell pepper, sliced
    • 1 small onion, sliced

For the rice:

    • 2 cups yellow rice (you can use a packaged mix or make it with rice, turmeric/saffron, garlic, and chicken broth)
    • 4 cups chicken broth
    • 1 tbsp butter

Optional garnish: fresh parsley, extra lime wedges
